My Gluten Free Mini Egg Cookie Recipe

A simple recipe for gluten free vanilla cookies packed with Mini Eggs - the perfect treat this Easter.

Ingredients
  

  • 250 g gluten free plain flour
  • 150 g caster sugar
  • 100 g butter melted
  • 100 g Mini Eggs crushed
  • 50 g dark brown sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • ½ tsp xanthum gum

Instructions
 

  • 1. Pre-heat the oven to 180°C.
  • 2. Cream together the melted butter and sugars.
  • 3. Sift the flour and xanthum gum together.
  • 4. Add the vanilla extract, egg and dry ingredients to the butter mixture.
  • 5. Mix to combine.
  • 6. Add the crushed Mini Eggs, mixing to combine.
  • 7. Using your hands, combine the dough into small balls.
  • 8. Add the balls of cookie dough to a greased baking tray, pressing lightly to flatten.
  • 9. Bake for 20 minutes or until golden brown.
  • 10. Leave to cool before serving.
