Today I thought I would share something a bit different with you. We recently learnt in the UK that the lock down restrictions were starting to ease, and while I am excited to see everyone it does mean my social calendar is becoming pretty full again.

July is always a busy month for me; with my Dad, brother, Mum, Uncle and three of my closest friends birthdays in July, we often end up bouncing from one get together to another. 5 Things You Need to Know About the Free and Easy Carrot Cake Mix

1. What does the Free and Easy Kit Include?

The Free and Easy Carrot Cake mix kit is a box which contains the dry ingredients needed to bake a 2 tier cake, 12 cupcakes or one medium loaf tin sized carrot cake. The packet mix is gluten and dairy free and can easily be made vegan too. All you need to add is one large egg, 115 ml water, 140 ml of vegetable oil and 105 ml of dairy free milk and bake according to the packaging.

2. Who is the Free and Easy Kit Suitable for?

The Free and Easy company cake mixes are dairy, nut wheat and gluten free as well as containing no mustard, celery and are vegetarian and vegan friendly. The carrot cake mix was easy to use and easily adaptable to be a vegan option.

3. Where do I purchase the Carrot Cake Mix?

Free and Easy are a member of the Healthy Sales Group and there cake mixes are available in Ocado or online through Amazon or Health Food Shops such as The Vegan Kind Supermarket found here . The packet costs between £3 – £5 depending on the store.

4. How Easy is it to make a gluten and dairy free carrot cake using this mix?

It is so easy to make an amazing carrot cake with this mix! Simply add 1 egg, water, oil and dairy free milk and follow the guidelines. The resulting cake is light and fluffy and packed with flavour! The bite of cinnamon is not overpowering and adds great depth to the cake. I decorated mine with the Betty Crocker Cream Cheese Style Frosting which is gluten free but may contain milk ingredients so please take care using this. The cakes held their shape, did not fall apart and I was able to easily spread the frosting without ripping the top layer off the cake.

5. Would I use the packet mix again?

I would definitely recommend the Free and Easy Carrot Cake Mix to anyone who is gluten and dairy free and needs a quick way to pull an amazing cake together. The instructions are easy to follow and the resultant cake was enjoyed by myself and my work colleagues who are not gluten or dairy free.
