My Gluten Free Simple Vanilla Cupcake Recipe

I don’t know about you, but sometimes I just miss the simple cupcake. The store bought ones can be a bit too sweet for me but when I was first diagnosed, I was so scared to bake gluten free. I created this recipe after I got a little bit scared when I realised how much I was spending on cupcakes. (Cupcake addiction = guilty).

I have tried so many gluten free cupcake recipes since being diagnosed as a coeliac and none seemed to work. The cakes were too crumbly, tasted odd or just didn’t get the rise I wanted. I have adapted this recipe from a range of options I tried.

I have used it to make simple cupcakes or to decorate them as Butterfly cupcakes and my friends and family love them. I hope you do too. It can be made simply with vanilla or more exciting with chocolate chips, jam or more. The list is endless. Best of yet, most people won’t be able to tell the difference! My Simple Gluten Free Vanilla Cupcakes

A simple recipe to create the perfect gluten free cupcake.

Cook Time 20 mins
Total Time 35 mins

Servings 12 cupcakes


  • 124 g butter
  • 120 g gluten free self raising flour
  • 110 g caster sugar
  • 2 medium eggs
  • 1 tsp vanilla
  • ½ tsp baking powder
  • ¼ tsp xanthum gum
  • ¼ tsp salt


  • Pre-heat the oven to 180 Degrees Celsius.
  • Mix together butter and sugar until light and fluffy.
  • Slowly add 1 egg at a time, mixing until just combined.
  • Add vanilla and mix to combine.
  • Sift together: flour, xanthum gum, salt, baking powder and sugar.
  • Add dry mixture to wet, slowly mixing until just combined.
  • Spoon mixture into individual cupcake cases.
  • Bake in a pre-heated oven180 degrees Celsius for 15 minutes or until golden brown and a tooth pick isplaced into the centre comes out clear.
  • Leave to cool before decorating.

Useful tips

  • Always ensure your ingredients are at room temperature. The best way is to get them out the fridge the night before. Trust me, trying to warm them up in the microwave or holding eggs in bowls of boiling water doesn’t work sadly.
  • Baking powder, xanthum gum and salt will become your best friends in baking gluten free. Together, they help keep the cakes together, help them to rise and taste great.
  • Mix ingredients until only just combined – overmixing will cause tougher cakes and less rise.
