My Gluten Free Pea and Broccoli Soup Recipe

Hi and welcome back.

It finally feels like Winter today. The weather in the UK has turned cold and we are now all scraping ice off our cars in the morning and desperately searching for that other glove. Seriously, I put my gloves back in the same place and one still always goes missing!

I know some people enjoy winter but for me, it just turns my hands blue, my skin cracks despite working my way through endless tubes of hand cream and the chilblains just make me feel more miserable.

The only comfort I have found is wearing my Turtle Doves hand warmers all the time. Having Raynaud’s is such a pain; you can find out more information here if you are interested. It is in this kind of situation that I turn to a heart bowl of soup for a meal.

Today, I thought I would share another warming and comforting recipe – Pea and Broccoli soup. I love this recipe because it is so simple yet fits the guidelines for 3 of your 5 a day without even trying and it doesn’t taste as if its too healthy either. combination with toasted cheese sandwiches or a warmed buttered ciabatta. My Gluten Free Pea and Broccoli Soup

A simple comfort food recipe; Pea and Broccoli Soup recipe that is gluten and dairy free.
Prep Time 10 mins
Cook Time 20 mins
Total Time 30 mins
Course Appetizer, Main Course, Soup
Servings 4 people

Ingredients
  

  • 200 g peas
  • 100 g broccoli cut into smaller pieces.
  • ½ onion diced.
  • 1 gluten and dairy vegetable stock cube
  • 1 tsp salt and pepper
  • ½ tsp dairy free butter

Instructions
 

  • Heat a pan and add dairy free butter.
  • Add onions and cook for 5 minutes until softened.
  • Make up the vegetable stock cube with 300ml water.
  • Add broccoli, peas, salt and pepper to the pan.
  • Add vegetable stock to the pan and cover.
  • Heat on a medium heat for 20 minutes.
  • Blend soup mixture and serve.

This soup is great for lunch at work, as a starter to a 3 course meal to wow guests or just for you to enjoy curled up on the sofa watching tv or reading a book. I will be continually wishing for milder temperatures and the start of Spring.
