I hope you are all doing well and looking forward to Easter. It seems such a strange time to be in lock down, and with the weather set to be warm, I hope everyone stays in and safe. Easter as a child for me meant Easter Eggs, plenty of chocolate and endless egg hunts with my brother. Now I am older, I still love the chocolate temptation and who can resist an egg hunt?
It feels like banana loafs are all over Instagram, and if you are looking for a basic recipe, you can find mine here. It is gluten free and very easy to adapt to dairy free too. As I am still on self-isolation I find myself getting more creative in the kitchen. I have such a sweet tooth and didn’t want to miss out on the Easter baking. I decided to add cocoa powder to a banana muffin recipe and it worked amazingly so I sharing the recipe today. These muffins have been decorated using the same cocoa powder and dairy free butter for butter icing. I have sprinkled mine with gluten free mini-eggs and the utterly decadent gluten free kit kat bunny.
Sadly this option is not dairy free.

Gluten Free, Dairy Free Banana Chocolate Muffins

Gluten and Dairy Free Banana Chocolate Muffins
Equipment
- 12 muffin cases with muffin cases
Ingredients
- 220 g gluten free self raising flour
- 100 g butter dairy free
- 100 g caster sugar
- 100 g vanilla yoghurt dairy free
- 2 medium bananas overripe is best
- 2 medium eggs
- 2 tsp cocoa powder dairy free
- 1 tsp vanilla
- 1 tsp baking powder
Instructions
- 1. Pre-heat the oven to 180°C.
- 2. Cream together the butter and sugar.
- 3. Sift together the dry ingredients.
- 4. Add the yoghurt, vanilla extract and eggs to the butter mixture, mixing to combine.
- 5. Add the dry ingredients to the wet, mixing to combine.
- 6. Mash the bananas together.
- 7. Add the mashed bananas to the mixture, mix to just combine.
- 8. Divide the mixture into 12 muffin cases.
- 9. Bake for 20 minutes or until golden brown.


There you go! My simple gluten free, dairy free Chocolate Banana Muffins. They are so tasty by themselves and you can freeze the recipe for a quick and easy snack or breakfast. As it is Easter, why not decorate with Nutella butter icing and sprinkled with mini eggs?
