My Gluten Free Chocolate Surprise Cupcakes

This week I thought I would share an easy recipe for my Gluten Free Chocolate Surprise Cupcakes. They are so simple to make and the perfect treat to indulge in over this lockdown period.Tips for this Recipe

This recipe is so simple to make and starts with my basic Chocolate Cupcake Recipe. You can find the link to that here.

To make the cupcakes, simply cream together butter and sugar before adding self raising flour, chocolate powder, eggs and vanilla. Divide between 12 cupcake cases and bake for 20 minutes.

I love how this recipe is easily gluten free and made dairy free too so no-one misses out. My trick to making this recipe dairy free is to use dairy free butter (I love the Vitalite Dairy Free Spread found at Asda here) which works just as well as regular Stork.

For cocoa powder, most of them are naturally gluten and dairy free but do check the ingredients first. I love this one from Asda: Asda Cocoa Powder found here because it is cheap but you also only need a small amount to make truly decadent chocolate cupcakes.

Easy Gluten and Dairy Free Chocolate Surprise Cupcakes

The perfect treat, a gluten and dairy free Chocolate Cupcake filled with Chocolate Buttercream.

Ingredients
  

  • 1 batch Gluten and Dairy Free Chocolate Cupcakes by LivingCoeliac
  • 200 g icing sugar
  • 100 g dairy free butter
  • 2 tbsp cocoa powder dairy and gluten free

Instructions
 

  • 1. Bake the Gluten and Dairy Free Cupcakes according to the recipe.
  • 2. Leave the cupcakes to cool.
  • 3. Cut a hole into the centre of each cupcake using a sharp knife, making sure to only cut ⅓ of the way in.
  • 4. Put the circle cut out of cake to one side.
  • 5. Cream together the butter, icing sugar and cocoa powder.
  • 6. Add the chocolate mixture to a piping bag.
  • 7. Using the piping bag to fill the hole left inside the cupcake.
  • 8. Add the cut out piece of cake back on (you may need to trim it slightly).
  • 9. Pipe more chocolate icing onto the cupcake to decorate.
  • 10. Serve,
