My Gluten Free Chicken and Bacon Pasta Bake

I hope you are all doing well and staying safe. With the dark cold weather in full swing in the UK, I am finding myself once again craving simple easy dinners that don’t take forever to cook.

Pasta bakes have always been my go-to comfort food and I have shared a good few recipes over the last two years. You can find my Easy Broccoli and Cheddar Bake or my Mexican Inspired Pasta Bake Recipes here if you are looking for inspiration. I find when I cook a pasta bake, gluten free pasta tastes how I remember muggle pasta tasting.

I can find sometimes the gluten free pasta does not combine with the sauce the way muggle pasta does. To rectify this, I simply add 1/2 a teaspoon of olive oil and toss the pasta in it before adding the sauces.

I find this way the sauce sticks to the pasta and I am not left with pasta and sauce together and not combined.

This simple pasta bake is so easy to make with only a few simple ingredients – perfect if you are like me and don’t want to be going to the shops as often now we are in a national lockdown.

Tips for the Recipe

To make My Easy Chicken and Bacon Pasta Bake, simply boil the pasta in a saucepan until cooked. Meanwhile, add the diced bacon and chicken to a pan and cook. Once cooked, add the meat to a baking dish. Add the herbs, spices, vegetables and sauce and cooked pasta and bake for 20 minutes.

There you go! A quick dinner that all the family will love. If you don’t have an ingredient, simply don’t add to the dish. I use my Easy Tomato Sauce Recipe as a base for this dish which makes life easier and I don’t have to worry about trying to find a gluten free pasta sauce.

My Easy Gluten Free Chicken and Bacon Pasta Bake

The perfect meal for a cold winter evening. This Chicken and Bacon Pasta Bake is easy to make, gluten free and takes less than an hour to come together -x-

Ingredients
  

  • 300 g gluten free pasta
  • 200 g chicken diced
  • 100 g bacon diced
  • 1 tin chopped tomatoes
  • 50 g sweetcorn
  • 50 g cheese grated
  • 1 medium red onion diced – optional
  • 1 tbsp olive oil
  • 1 tsp chilli powder
  • 1 tsp salt and pepper
  • 1 tsp basil
  • ½ tsp sugar

Instructions
 

  • 1. Boil a pan of water and add the pasta.
  • 2. Cook the pasta for 15 minutes or until softened.
  • 3. Add ½ tbsp olive oil to a pan on low heat.
  • 4. Add the diced chicken and bacon to the pan and cook for 10-15 minutes or until fully cooked.
  • 5. Add the diced onion to the chicken pan and cook until softened.
  • 6. Drain the cooked pasta and add the other ½ tbsp olive oil, tossing to coat.
  • 7. Add the pasta to the baking dish.
  • 8. Add the chopped tomatoes, sweetcorn, herbs and sugar to the chicken mix and cook for 5 minutes.
  • 9. Add the tomato mixture to the pasta mix, tossing to coat.
  • 10. Pre-heat the oven to 180°C.
  • 11. Bake the pasta bake for 20 – 25 minutes.
  • 12. Serve immediately with a side salad or pot up leftovers for the next day.

This recipe can be batch cooked and then frozen for up to 2 weeks so you can easily freeze then defrost and cook for 20 minutes to have as a grab-and-go dinner when we are able to visit friends and family again. The best part, you only need 1 pot, 1 pan and a baking dish to make this pasta bake so washing up is simple too.
