I hope you are all well and enjoying all the blog posts. I have been enjoying the bright (ish) UK weather lately and it has got me experimenting with new flavours. I always used to be a simple vanilla type of girl, but I am now finding I am loving flavours relating to the season.
Bright colour and flavours are what I am particularly drawn to this Spring/Summer season. For me, the warmer weather means refreshing tastes and lots of good food. I have really been enjoying using lemons in my bakes over the last month. From my Lemon Strawberry Poke Cake to my Simple Lemon Cake, there are plenty of sweet treats for you to enjoy this season.
I wanted to try cooking lemon into a savoury dish and the result was this amazing gluten and dairy free Lemon Garlic Chicken. You can jump straight to the recipe if you want to.

I love the flavour combination of the lemon and garlic and this recipe means the flavours don’t get too overwhelming. I enjoyed this simply with basmati rice and fresh peas but you can enjoy it how you wish.
This dish would be perfect after the chicken has been cut down into smaller pieces and added to egg noodles.
To make this dish you simply add diced onion, salt, pepper, garlic and the rind and zest of one lemon to a bag. Add the chicken and toss to coat before leaving to marinate in the fridge for a few hours. Remove the chicken and sauce from the bag and cook in the oven. Serve with basmati rice and peas for a tasty easy meal.
The best part of this dish? You only need one lemon, chicken, salt, pepper and garlic to make it. I had extra lemons on hand after all my baking so this was easy to re-create. The dish is gluten and dairy free too so you don’t have to adapt anything to make it.

My Gluten and Dairy Free Lemon Garlic Chicken Recipe
Gluten and Dairy Free Lemon Garlic Chicken
- 2 medium chicken breasts cut into strips
- 1 medium lemon
- 1 small red onion
- 1 tsp salt and pepper
- 1 tsp garlic powder or fresh garlic
- 1 tsp sunflower oil
- Add the sliced chicken, onion, garlic, salt and pepper to a bag.
- Grate and juice the lemon and add this to the bag.
- Stir the mixture to thoroughly coat the chicken.
- Leave the bag in the fridge to marinate for at least 1 hour.
After 1 hour to marinate the chicken.
- Pre-heat the oven to 180°C.
- Add the chicken and onion mixture to a baking dish and cook for 25 minutes or until the chicken is fully cooked.
- Stir once half way through cooking.
- Meanwhile boil water in a saucepan and cook 100g peas and 280g basmati rice.
- Serve the lemon garlic chicken with rice and peas.

I love how easy it is to make this recipe. I will add the chicken, onions, spices and lemon to a bag and leave in the fridge overnight to marinate. When I come to cook dinner the next evening, I simply add the chicken mixture to a baking dish and cook while cooking the rice and peas.
