Now we are officially in the Springtime in the UK, I am finding myself drawn to the citrus flavours once again. Anyone else feel the same? I just feel so much happier when the sun comes out and I don’t have to wear a thick coat and gloves all the time.
My favourite citrus flavour has to be lemons; I just can’t seem to get enough of them! I love baking with them in my Easy Lemon Blueberry Loaf Recipe which you can find the recipe here if you are interested. I just love how the sharpness of the lemons can transform any simple bake.
Last year, I finally perfected my Easy Gluten Free Cookie Recipe and the resulting cooking is thick yet soft and packed with flavour and so easy to make. You can find my simple Raisin Cookie Recipe here. I decided to play around with the recipe to create a Spring inspired recipe and this Lemon Cookie Recipe was made.
To make the cookies, simply cream together butter and light and brown sugar in a bowl. Add the zest and juice of 1/2 a lemon and mix to combine. Add the eggs and flour slowly to the mixture until it forms a bowl. Using your hands, form small cookie shapes and add to a greased baking tray. Bake for 10 minutes or until the cookies are slightly golden brown. Leave to cool before serving.
A quick tip with this recipe is that the cookies will be soft and breakable when the come out of the oven but will become more solid once cooled.
I love mine just on their own or sprinkled with icing sugar but why not make a glacier icing with the juice of 1/2 a lemon and 50g icing sugar. Once the cookies are fully cooled, dip them into the icing for a truly sweet lemon taste.

Gluten Free Lemon Cookie Recipe
- 250 g gluten free plain flour
- 150 g light brown sugar
- 100 g butter melted
- 50 g dark brown sugar
- 1 medium egg
- ½ medium lemon
- ½ tsp salt
- ½ tsp xanthum gum
- 1. Pre-heat the oven to 180°C.
- 2. Cream together the butter and sugars.
- 3. Add the zest and juice of ½ a lemon.
- 4. Sift the dry ingredients together.
- 5 Whisk the egg.
- 6. Slowly add the egg and dry mixture to the sugar mixture, ⅓ at a time until the mixture comes together.
- 7. Using your hands, form cookie shapes and add them to the baking tray.
- 8. Bake for 10 minutes or until lightly golden brown.
- 9. Leave to cool before decorating and serving.
