As it is Christmas (well anytime of the year if I am being honest) I have a craving for gingerbread spice. I was browsing traybake recipes recently and discovered the best way to turn this tasty treat festive; a Gingerbread Traybake.

The recipe is so simple to make and gives the perfect blend of Christmas flavours (mainly gingerbread) without being too overpowering. I decorated mine with buttercream, icing and iced holly decorations but a simple dusting of icing sugar or warmed with ice cream would be amazing too!

To make this recipe, simply cream together butter and light and brown sugar before adding golden syrup, eggs and self raising flour with ginger. Bake for 30 minutes and there you go! A great cake to enjoy while watching Christmas films.

My Easy Gluten Free Gingerbread Traybake

Gluten Free Gingerbread Traybake
Equipment
- 1 medium rectangle cake pan
Ingredients
- 200 g gluten free self raising flour
- 150 g butter
- 100 g dark brown sugar
- 50 g light brown sugar
- 75 g golden syrup
- 4 medium eggs
- 2 tsp ginger powder
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- 1. Pre-heat the oven to 190°C.
- 2. Cream together the butter and sugars until fully combined.
- 3. Add the golden syrup, eggs and vanilla extract, mixing to combine.
- 4. Sift together the dry ingredients and add to the butter mixture.
- 5. Mix to combine.
- 6. Pour batter into the greased cake pan.
- 7. Bake for 30 minutes or until golden brown.
- 8. Leave to cool before cutting and decorating.
There you go! My simple and Easy Gluten Free Gingerbread Traybake. This festive cake is perfect for the holiday season or just when you want a twist on the classic Vanilla Traybake.
