My Easy Gluten and Dairy Free Herb Roasted Potatoes

It has been a very busy time lately for me again, as usual. Working overtime and staying late for emergencies means that when I finally do get home, I can’t be bothered to cook. Anyone else feel the same?

Sometimes, I just get fed up with food and find myself eating rubbish food that all taste the same. Chips again with dinner does start to bore you when it is the third night in a row you have them. I often find the potato part of my meal is the part that can get the most tedious. Don’t get me wrong, I love the humble jacket potato or the Hasselback Potato which you can find my recipe here if you are interested to switch things up.

I was first introduced to this recipe by a family member during the 10 weeks I was on lockdown during the Corona Virus and they became a great way to switch up our meals. Being at home and unable to go out to eat, meant we easily got fed up with the foods we were eating and wanted to change it up. This recipe was a staple in her house and now I love it too.

It is so simple and easy to make too. Simply boil new potatoes in a pan for 5 minutes before tossing in oil, salt, pepper and herbs and bake for 25 minutes.

The result is this perfect crispy mini potato, packed full of flavour and only takes as long as the rest of the meal to cook. I love these potatoes hot and eaten on the day alongside salmon or spicy chicken. Or why not leave to cool and add to salmon, tomatoes and added greens for a quick salad?

My Easy Gluten and Dairy Free Herb Roasted New Potatoes

A quick and easy recipe for the perfect crispy herby roasted new potato that is gluten and dairy free.
Prep Time 5 mins
Cook Time 25 mins
Course Side Dish
Servings 6

Ingredients
  

  • 200 g new potatoes cut into quarters.
  • 1 tbsp olive oil
  • 2 tsp basil, oregano and mixed herbs
  • 1 tsp salt and pepper

Instructions
 

  • Pre-heat the oven to 180°C.
  • Boil a pan of water and add the chopped potatoes.
  • Boil potatoes for 5 minutes.
  • Remove the potatoes from the heat and drain.
  • Toss the chopped potatoes in olive oil and herbs.
  • Add to a baking dish and cook for 25 minutes.
  • Serve immediately.

The best thing about this dish is that it is naturally: gluten and dairy free. There is no worry about complicated steps, simply boil the potatoes for 5 minutes to softne before tossing them in oil and herbs and cook. Why not add a twist by adding fresh garlic or smoked paprika?
