I hope you are okay and enjoying the Spring. In these difficult times, I can often feel overwhelmed and scared. It is so hard to believe we are in Spring already. When I feel scared, I find myself counting my blessings and enjoying the simple things in life. Fore me, that is a coffee and sweet treat in the early morning sunshine. Today I thought I would share my 5 Quick and Simple Recipes for when I need a pick me up. I hope you enjoy. C. -x-
Such a simple treat but one that can be made with basic ingredients. You can create them using gluten free self raising flour following my recipe here or using gluten free plain flour using this recipe. I love how I can make them even sweeter by adding chocolate chips or by simply cutting them in half an adding a spoon of Jam and Buttercream to make my Mini Jam and Cream Sponge Cakes.
OMG! I never realised how much I loved pancakes until I perfected this recipe this year. I love how I can add a teaspoon of baking powder and 1/2 teaspoon xanthum gum to make American style pancakes or just keep the recipe the same for crepes. I seem to be enjoying them with Nutella a bit too much, not great for my Asthma and dairy free so I have also been enjoying them with the Sweet Freedom Choc Shot in Mint or with Maple syrup. 3 Cornflake Nest Cakes
This recipe is so easy to make; my neice and nephew love to make these. If you can find gluten free cornflakes, I would highly recommend re-creating these at home. You can find the recipe here. I use dairy free chocolate now and the recipe is even better because of it. They make me smile when I have one because it reminds me of my childhood. What was your favourite food as a child? Mine were either these cakes because I used to make them with my Mum or jam and cream sandwich biscuits.
Who can resist a flapjack? My other half enjoys this recipe and can’t tell that it is gluten and dairy free. I have to make these sparingly as I do struggle with gluten free oats if I eat them regularly. If you can enjoy gluten free oats, I would highly recommend this snack. You can find the recipe here. I always seem to add dark chocolate chips and raisins but why not try dried apricot and nuts instead?
5. Banana Chocolate Muffins
Oh my. I never knew I needed this recipe in my life until I had bananas to use up over Easter. The Chocolate Banana muffins are gluten and dairy free and you can add any topping you like. You can find the recipe here. These muffins are quick and simple to make but a total indulgent treat. I decorated mine with crushed mini eggs and the gluten free Kit Kat Bunny but why not add chopped nuts or chocolate sprinkles instead?
